6 Days in...
The pantry living is going well. Friday the 1st I spent prepping meals for the weekend--baked chicken breasts, spaghetti sauce and chicken parmesan...I worked all weekend so it was important to have meals made for the family. I also made cinnamon rolls to take in to work. I also went shopping for fresh produce and dairy products. I spent $40, using a $25 Albertsons gift card to help pay for the groceries--$15 out of pocket. I purchased some salads to eat at work as well. The only things I purchased that weren't "allowed" were some nuts for my husband to eat at work and a bottle of salad dressing. We ended up not eating formal meals all weekend--everyone was busy and they just grabbed what they could find in the fridge. Tonight we had the chicken parmesan and the spaghetti. I had gone to Winco this morning to get some fresh broccoli and more fruit. I got a honeydew melon, strawberries, grapes, nectarines, bananas, blueberries and apples. I made blueberry muffins for the kids for breakfast. I had a bunch of carrots that needed to get used so I grated them up and used some to make a carrot cake and froze the rest to make carrot cake in the future. I also steamed some of the carrots to go with dinner. I used the bread machine to make a loaf of french bread--yum! I grated up abrick of colby-jack cheese and a wedge of paremsan also.
Doing well so far--tomorrow will be another food prep day because I have to work 12 hour shifts on Wednesday and Thursday.

Living from My Pantry and Freezer
June 1st will be the beginning of an experiment of sorts for my family and me--we are going to prepare all of our meals and snack from what we have in our pantry and freezer. The exception will be fresh produce and dairy. What prompted this?? My husband came to me last week and said that he will likely be laid off at the end of May. I have been on a medical leave of absence for the past 10 weeks and will return to work the 25th of May. I have spent the last 10 weeks using coupons to stock us up on everything our family uses. Little did I know that we may be living from that stockpile. Even if he doesn't get laid off, I will still do this because I want to prove to myself that I can. I am looking forward to the challenge and will post regularly how I am doing.

Sunday May 8th Coupons
What a difference between the Register Guard in Eugene and The Oregonian out of Portland. Eugene paper--$37.00 in coupons. Oregonian $102.00 in coupons. If you can afford it, it looks like it is a better deal to get mulitples of the Oregonian rather than your local paper on Sunday. More coupons seem to be made available in larger metropolitan areas.
